Cacao Nibs & Peanut Butter Green Smoothie
Cacoa nibs are definitely shadowed by more popular cacao products, like cacao powder and butter. But they are just as beneficial and important!
Cacao nibs are roasted cacao beans that have been separated from their husks and broken into smaller pieces.
They are one of the best dietary sources of magnesium, as well as a good source of calcium, iron, copper, zinc and potassium. They are also a great source of anti-oxidants.
Studies show that cocoa nibs have higher antioxidant levels than blueberries, red wine and green tea! As an added bonus, the antioxidants are more stable than in other foods, which make it easier for the body to absorb. Need an energy boost or a pick me up? Grab the cacao nibs - you won't regret it.
They are wonderful eaten on their own as a snack, added to baked goods and even smoothies. When I read that I knew I had to try it out for myself.
Today was the perfect day as the jar of cacao nibs on the shelf kept calling out to me. I found a recipe online and popped to the shops to buy some Almond Milk - one of my favourite milk alternatives. Not only does it give the cows a break, it contains fewer calories than regular milk and adds great flavour to any smoothie.
I gathered all of my ingredients. Even the wilted spinach in the fridge could be salvaged. That is the beauty of smoothies!
After the first delicious sip of smoothie I fell in love. It was refreshing, light, and the flavours were deliciously delicate - the perfect way to start the day. And what's more, it inhibits those pesky sugar cravings. And who can say no to starting the day with cacao-goodness? I will definitely be making this again!
Cacao Nibs & Peanut Butter Green Smoothie Recipe
Ingredients:
- 3/4 cup milk substitute (I used Almond Milk)
- 1 loose cup spinach leaves
- 2 teaspoons peanut butter
- 1/2 frozen banana (the riper the better)
- 1 heaped tablespoon Cacao Nibs
- 1 cup ice
- A few drops agave Syrup (optional)
Directions:
Combine all the ingredients in a blender and blend until smooth.
I used sweetened Almond Milk so it was unnecessary for me to use agave.
But if you find the bitter taste of the nibs coming through too strongly, simply add a few drops of agave to balance it out.
