In South America this Smoothie Bowl would be called "Tigela" de Acai - a typical Brazilian breakfast dish. Made with ice, fruit and a syrup paste formed of Acai Berries and Yacon. The paste can be stored for a few months and added to smoothie or pancake mixes for a sweet and fruity antioxidant boost. This is sort of 2 recipes in one but very exciting as you can let out your artistic flair by being creative on top of your smoothie bowl. We guarentee not one person will arrange their paste the same... The taste of this smoothie bowl is so super refreshing you won't want to stop!

Ingredients

  1. FOR THE SYRUP PASTE:
  2. Bain Marie
  3. Airtight Jar
  4. Squeezey Syrup Tube
  5.  
  6. FOR THE SMOOTHIE:
  7. High Powered Blender
  8. Serving Bowl
  9. Serving Spoon

Method
  1. FOR THE SYRUP PASTE:
  2. Melt the coconut oil in a bowl over a pan of boiling water.

  3. Then, add the yacon syrup & the acai powder and stir until a nice purple colour and blended they're all blender together.

  4. Store in an airtight jar, ideally not in the fridge as it will harden and be harder to scoop.

  5. Once you are ready to use it, heat some water in a pan on a low heat and place the jar in in the middle. Keep watch on it!

  6. Once you are able to spoon out a little, pop it into a squeeze tube and it is ready to use! 

  7. You can use this to draw wonderful jazzy patterns on the top of your smoothie bowls. 

  8. FOR THE SMOOTHIE:

  9. Prep: Peel and freeze banana in freezer overnight or for at least a few hours. 

  10. Prep: Make Chia Pudding by adding chia seeds to water at a 1:3 ratio e.g. 1 Tbsp chia seeds to 3 Tbsp water. Leave to set for 30 minutes in the fridge or overnight if possible.

  11. On the day of creation: Add all the smoothie ingredients to a high powered blender and blitz until smooth. As there are frozen ingredients it might take a while to dislodge the frozen lumps, so keep whizzing!

  12. Pour into bowl and top with exciting syrup paste & whatever else your heart and taste buds desire!
