Let your taste buds tingle with this purple Acai Nice Ice Cream Recipe! Completely sugar and dairy free. Bursting with antioxidants, Acai Berry and Blueberries are low GI fruits packed full of phyto-nutrients, vitamins and healthy fats. Banana will supply you with an energy boost and Lucuma acts as a healthy sweetener. A family favourite, perfect for summery garden gatherings in the sunshine!

Ingredients
- 100g Cashew Nuts
- 200ml Cold Water
- 2 Medium Bananas
- 1 Punnet of Blueberries
- 1 Tbsp Lucuma Powder

- Strawberry or Raspberry
Method
- NIGHT BEFORE: Measure 200ml of cold water into a jug with the 100g cashew nuts and leave to soak overnight. Also, put 2 chopped bananas and punnet of blueberries into freezer overnight.
- NEXT DAY: Put soaked cashews and liquid into high-speed blender and whizz until smooth and creamy.
- Add frozen bananas and blueberries to blender, whizz!
- Add acai and lucuma powder into mix, blend until smooth.
- If your blender is stuggling to blend the frozen ingredients, melt coconut oil in glass bowl in pan over a low simmer then add to your mix and blend again.
- Once the nice ice cream mix is completely smooth, creamy and brilliantly purple transfer to a container and put in freezer for at least 1 hour or until scoopable.
- Optional: Add fruit or coconut chips as a topping (for toasted coconut chips as seen below, pop in dry pan and turn heat on low until they're lightly browned).
- Serve and enjoy!
