- 1/2 Banana
- 130ml Almond Milk

- Fresh Fruit
- Extra Syrup
Method
- First, create a Chia Egg mixture. In your small bowl put 1 Tbsp Chia Seeds with 3 Tbsp of Water and leave aside for 15 minutes.
- Pop the Buckwheat Flour & Baking Powder into large bowl.
- In jug, whisk together the Almond Milk, Vanilla Extract/Powder, chosen Syrup & Chia Egg (after the 15 minute wait).
- Once whisked, pour wet mixture into the dry mixture in the large bowl. Mash your banana with a fork and add to new mixture.
- Beat mixture until you have a smooth batter and leave to stand for a few minutes.
- Alternatively, if you have a high powered food processor or blender ignore points 2 - 4 and just add all ingredients and blend together.
- Heat a non-stick frying pan over a medium heat. Add the Coconut Oil to pan, less or more if you'd prefer (this acts as an alternative cooking oil).
- Once the Coconut Oil has melted add a ladle or two of your batter, dependant on the size of your pan - the batter must be thick!
- Wait until the top of the pancake shows little bubbles and flip it over to cook other side. It'll be ready when both sides are golden brown. Flip more times if nessesary.
- Keep doing the above point until all the batter is used up. They taste delicious straight out of the pan but if you cook one at a time and would like to eat them all together, keep earlier cooked pancakes warm in the oven on a low heat.
- Serve and enjoy!
