
This Autumn Superfood Salad is packed with seasonal produce and nutritious immune-boosting superfood powders, seeds, and nuts to stave off those autumn bugs.
Ingredients
For the dressing
- ¼ cup extra virgin olive oil
- ½ cup fresh blackberries/blueberries
- 1 tsp sea salt
- 1¼ cup fresh filtered water
For the salad
- 200g shredded organic kale
- 1 tbsp extra virgin olive oil
- 1 large carrot (shredded/spiralised)
- 1 large courgette shredded/spiralised)
- 1 red apple (finely sliced)
- Zest of 1 lemon
Method
- Start by making your dressing. Simply add all of the ingredients except for the chia seeds and water into a bullet-style blender and blend until smooth, next add half the water and blend, then repeat with the other half. Stir in the chia seeds and leave to sit in the fridge until needed.
- Next, add your kale to a large bowl and ensure that you remove all of the woody stalks first. Pour over your olive oil then massage for 5-10 minutes to reduce bitterness.
- Stir in your remaining ingredients then drizzle with dressing and serve.
