Gluten Free Banana & Coconut Cake Recipe

Once cooled store in refrigerator.

This is an incredibly light, moist cake. The banana paired with the coconut gives this cake a real tropical taste.  Gluten and dairy free, the coconut oil gives a smooth and silky texture - all the coconut products are 100% natural. Substituting Banana Powder for icing sugar makes not only a delicious cake but one that is actually good for you! A perfect mid morning or afternoon treat.

  • 1 Large Mixing Bowl
  • Wooden Spoon
  • 1 Lined Greased Tin
  • Cooling Rack


Preheat the oven to 180°C/160°C Fan/Gas Mark 4

  1. Cream together the coconut oil and coconut sugar until you have a smooth consistency
  2. Add the eggs, one at a time, with a little coconut flour to prevent curdling
  3. Mix together the remaining coconut flour with the baking powder and xantham gum and stir into the cake mixture until you have a smooth cake batter
  4. Fold in the mashed bananas and pour the mixture into a lined and greased tin, to grease the tin use a little coconut oil
  5. Place in the centre of the pre heated oven and bake for 40 minutes or until the cake is springy to the touch and a knife comes out clean
  6. Once thoroughly baked remove from the oven and allow to cool for 10 minutes before removing from the tin and leaving to cool on a cooling rack
  7. Before serving sprinkle the banana powder over the top as you would icing sugar for a healthier topping!

By using coconut oil instead of butter you not only get a silky smooth texture but more health benefits to boot!  Coconut oil remains stable when heated and contains 50% lauric acid, this is antibacterial and antifungal and can help to stave off infections. It is also a great source of essential fatty acids which are necessary to absorb fat soluble vitamins, keep us fuller for longer and promote optimum brain function.

Whilst still being sugar, coconut sugar is a healthier option than regular sugar, it is high in potassium and vitamin B1 and contains modest amounts of vitamin C, iron and copper.  Also high in potassium are the fresh bananas and the banana powder - potassium is vital to the function of cells and maintains normal blood pressure.

All in all this cake is delicious, sweet and nutritious.
