Equipment
- Measuring Jug or Bowl
- Hand-held Lemon Juicer
- Mixing Spoon
- Tea Towel or Plate for Covering
- Sieve
- Glass Jar
- Chopping Board and Knife
- 4 Compartment Ice Lolly Mould
Ingredients
- Juice of 3 Lemons
- 1 Pint of Boiling Water
- Handful of Fresh Strawberries
- Extra Water (to dilute)
Method
- Firstly, to make the baobab cordial - place baobab powder and coconut sugar in a jug or bowl.
- Juice the 3 lemons on top of the powders and pour over the boiling water - mix together, until well combined.
- Cover and leave for at least 4 hours or overnight if you can.
- Stir a little again, then strain the mixture into a glass jar using a sieve, to get rid of any lumps of leftover powder.
- Next, dilute 1 part of this cordial to 2 parts water for the ice lollies to make the lemonade mixture.
- Then, chop the fresh strawberries into small segments and pop them in the bottle of the ice lolly moulds.
- Pour the lemonade mixture into the ice lolly moulds to the top and place the sticks in.
- Place into the freezer for at least 4 hours, until properly frozen
- Eat and enjoy!
