Make these tasty, fizzy, healthy Ice Lollies with your little ones... but you can definitely enjoy them too! Baobab is a nutrient rich fruit powder packed with vitamin C, teamed with the alternative Coconut Sugar these vegan lemonade ice lollies are made as a diluted cordial with fresh strawberry pieces. A delicious superfood treat for those hot Summer days.

  • Measuring Jug or Bowl
  • Hand-held Lemon Juicer
  • Mixing Spoon
  • Tea Towel or Plate for Covering
  • Sieve
  • Glass Jar
  • Chopping Board and Knife
  • 4 Compartment Ice Lolly Mould
Method

  1. Firstly, to make the baobab cordial - place baobab powder and coconut sugar in a jug or bowl. 
  2. Juice the 3 lemons on top of the powders and pour over the boiling water - mix together, until well combined. 
  3. Cover and leave for at least 4 hours or overnight if you can.
  4. Stir a little again, then strain the mixture into a glass jar using a sieve, to get rid of any lumps of leftover powder.
  5. Next, dilute 1 part of this cordial to 2 parts water for the ice lollies to make the lemonade mixture.
  6. Then, chop the fresh strawberries into small segments and pop them in the bottle of the ice lolly moulds.
  7. Pour the lemonade mixture into the ice lolly moulds to the top and place the sticks in.
  8. Place into the freezer for at least 4 hours, until properly frozen
  9. Eat and enjoy!
