The sourness of the inca berries balances the sweet berries and the subtle lucuma to create a lovely wholesome sweet paste using only natural sugars that can be added to smoothies or porridge for an instant fruity hit, or used as a healthy alternative to jam.

- 2 x Large Saucepans
- Wooden Spoon

Ingredients
- 4 Bramley Apples
- 2 Pears
- 400g Blackberries
- 350ml Water
Method
- Firstly, chop apples and pears and place in water, in a large saucepan on medium heat and cook for 5 minutes until it starts to bubble. Add blackberries, continue to boil.
- Next, add the lucuma and dried inca berries to the mixture and stir with a wooden spoon to dissolve the powder well.
- Keep it on the heat for 35 - 40 minutes, stirring regularing so the chunks start to break down.
- Use an hand blender to semi blend so that it fits into jars easier.
- Then, in another large saucepan submerge the empty clean jars and boil for 5 minutes to sterilize.
- When your compote is at a desired consistency, spoon straight into the jars and seal the lids. As it cool it will create a vaccum and then it can be stored for up to 3 months.
- Once jars are open, use within 3 days.
- Add to smoothies, porridge or as an alternative to jam. Enjoy!
