
Luxurious and absolutely unique, this cake is perfect when you want something just a little different and will satisfy any palette! It's ridiculously easy to make, is not overly sweet and goes perfectly with a cup of green tea. The tahini makes a light, fluffy texture in the cake, with the addition of the chocolate ganache making this cake an absolutely decadent treat.

Ingredients
- For the Cake:
- 200g Dairy Free Butter
- 3 Organic Free Range Eggs
- 96g Almond Flour
- 30g Gluten Free All Purpose Flour
- 1 Tsp Gluten Free Baking Powder
- For the Ganache:
- 100g Dark Chocolate
- 50 ml Tinned Coconut Milk
Method
- Preheat oven to 350 degrees F (180 degrees C or 160 degrees C fan) and line your tin with parchment paper (I used an 8" (20cm) round but you can use an 8"x 8" (20 cm x 20cm) square tin)
- In a saucepan, melt the butter and black sesame tahini, stirring constantly on low heat until the butter and tahini are combined.
- Remove from heat and cool for a few minutes.
- Beat eggs and then add them slowly to the mixture while whisking to ensure that the eggs do not cook.
- In a large mixing bowl, combine the coconut sugar, almond meal, gluten free flour and baking powder.
- Add the black sesame tahini and butter mixture and continue to mix until well combined.
- Transfer mixture into the prepared tin and bake for 35 - 40 minutes. It is done when the cake is moving away from the edges of the pan and a skewer comes out clean.
- Cool in tin for 15 minutes and then turn onto cooling rack to cool completely.
- Break the chocolate into small pieces and place into a heatproof bowl.
- In a small saucepan, heat the coconut milk until just about to boil.
- Pour the hot coconut milk over the chocolate pieces and stir gently in small circles with a spatula. You are trying to prevent air bubbles so stir slowly and gently. It will take a few minutes but it will come together to a smooth chocolate ganache.
- Spread onto the top of the black sesame cake and decorate further as desired.
- Serve and enjoy with a cup of green tea or the like.
