Luxurious and absolutely unique, this cake is perfect when you want something just a little different and will satisfy any palette! It's ridiculously easy to make, is not overly sweet and goes perfectly with a cup of green tea.  The tahini makes a light, fluffy texture in the cake, with the addition of the chocolate ganache making this cake an absolutely decadent treat.

  • 8' (20cm) Cake Tin
  • Saucepan
  • Large Mixing Bowl
  • Wooden Spoon

For the Cake
  1. Preheat oven to 350 degrees F (180 degrees C or 160 degrees C fan) and line your tin with parchment paper (I used an 8" (20cm) round but you can use an 8"x 8" (20 cm x 20cm) square tin)
  2. In a saucepan, melt the butter and black sesame tahini, stirring constantly on low heat until the butter and tahini are combined.
  3. Remove from heat and cool for a few minutes.
  4. Beat eggs and then add them slowly to the mixture while whisking to ensure that the eggs do not cook.
  5. In a large mixing bowl, combine the coconut sugar, almond meal, gluten free flour and baking powder.
  6. Add the black sesame tahini and butter mixture and continue to mix until well combined.
  7. Transfer mixture into the prepared tin and bake for 35 - 40 minutes. It is done when the cake is moving away from the edges of the pan and a skewer comes out clean.
  8. Cool in tin for 15 minutes and then turn onto cooling rack to cool completely.

For the Ganache

  1. Break the chocolate into small pieces and place into a heatproof bowl.
  2. In a small saucepan, heat the coconut milk until just about to boil.
  3. Pour the hot coconut milk over the chocolate pieces and stir gently in small circles with a spatula. You are trying to prevent air bubbles so stir slowly and gently. It will take a few minutes but it will come together to a smooth chocolate ganache.
  4. Spread onto the top of the black sesame cake and decorate further as desired.
  5. Serve and enjoy with a cup of green tea or the like.
