Harness the power of purple! Blueberries are  sweet and nutritious, packed full of vitamins and antioxidants. Add a touch of acai, baobab and beetroot and the healthy factor goes through the roof.   • Parchment Paper
  • Bain-Marie

Method
  1. Preheat oven to 350F/gas mark 4
  2. Line a large baking sheet with parchment paper
  3. Put all the ingredients into a bowl and combine well. Doing it by hand means the blueberries stay intact
  4. Form the mixture into 12 balls
  5. Put them on the baking tray about 2 inches apart and gently flatten the tops
  6. Bake for 12 - 15 minutes
  7. Let them cool completely

FOR THE DIPPING CHOCOLATE:

  1. Break the chocolate into pieces and melt with the coconut oil
  2. Dip the biscuits in chocolate and put them back on the tray
  3. Refrigerate until the chocolate sets
  4. Enjoy!
