
We all know nuts are packed with protein and a great snack to keep your energised throughout the day. The ingredients in this recipes provide a crunchy, yet mildly sweet, unique and zingy addition - providing bouts of antioxidants, vitamins, minerals and essential fatty acids. The delicious taste of Mango also provides vitamin C while Chilli can help stimulate digestion. A great snack for work or on the go!

Ingredients
- 2 Tbsp Kaffir Lime Leaves
- Zest of 1 Lime
- 1 Tbsp Lime Juice
- 1-2 Red Chilies
- 1 Tsp Sea Salt
Method
- Preheat the oven to 170°C, 335°F, gas mark 3.
- De-stalk the kaffir lime leaves and finely chop. Add to a small bowl and mix in the lime zest.
- Finely chop the chilli and mix in with the lime. Set aside.
- Mix 1 tablespoon of mango powder with the salt and set aside.
- Pour the oil into a baking tray and heat in the oven for 1 minute. Then remove from the oven and add all of the nuts. Mix well using tongs until they are evenly coated in the oil.
- Add the chilli/lime ingredients and mix well until the nuts are evenly coated.
- Then add the mango/salt mixture and combine well. Spread the nuts into a single layer on the baking tray.
- Bake in the oven for 15 minutes but stir the nuts every 5 minutes.
- After 15 minutes, remove the nuts from the oven and sprinkle the remaining mango powder over the nuts. Stir with tongs and coat while they are still hot.
- Allow to cool on the baking tray before serving.
- Store leftover nuts in an airtight container at room temperature.
