This Easter Egg Recipe is perfect for egg hunts this Easter and will be enjoyed by all the family! Delicious dark chocolate eggs with crunchy popcorn and smooth salted caramel. Easy to make, sweet treats when following this simple recipe and each Easter Egg is completely vegan, dairy and gluten-free. These free-from Easter Eggs will make for a fantastic Vegan Easter! Equipment
  • Silicone Egg Mould
  • Bain Marie
  • Large Saucepan with Lid
  • Oven Gloves
  • Wooden Spoon
  • Hand Whisk
  • Fridge
  • Blender or Food Processor
Method

  1. Make the popcorn:
  2. Heat the coconut oil in a large pan over a moderate to high heat. Add 3 of the popping corn kernels and listen - when you hear the first one pop, add the rest of the popping corn to the pan & put lid on top. 
  3. Using oven gloves, shake the saucepan so that the oil covers all the corn, can take a peek to make sure but keep lid on. 
  4. Allow the corn to pop until you have a full saucepan and the popping sound has slowed down, take lid off and turn off heat - add a pinch of salt, mix and set aside. 
  5. Make the salted caramel:
  6. Place all the caramel ingredients into a high powered blender or food processor and blend until all ingredients are combined and the consistancy is smooth. 
  7. Spoon into a bowl and set aside for a moment. 
  8. Prepare the chocolate: 
  9. Pulse the coconut sugar in the cleaned food processor or blender for a moment to create a finer texture.
  10. Melt the cacao butter over a bain marie use a wooden spoon to mix, once melted - let it cool a little then slowly stir the coconut sugar into the mixture until well combined. 
  11. Then mix the cacao powder into the mixture the same way until a smooth, chocolate mixture is formed. Use a small hand whisk if needs be - to avoid lumps!
  12. Give it a taste at this point, so that the chocolate is to your perfect taste. If not - add more of powder or pulsed sugar. 
  13. Make the eggs:
  14. Fill half of the silicone egg moulds with the chocolate mixture, then place half a Tbsp of the caramel mixture on top with a few pieces of popcorn.
  15. Then make sure you cover the popcorn completely with more of the chocolate mixture in the same mould, filling all the gaps.
  16. Repeat with the rest of the egg mould shapes. 
  17. Pop easter eggs into the fridge for at least 20 minutes to set and go solid. 
  18. Hide, hunt, find - eat and enjoy! Happy Easter!
