- Large Saucepan with Lid

- Blender or Food Processor
Ingredients
For the popcorn
For the chocolate eggs
For the salted caramel
- 60ml Water
- 1/2 Tsp Vanilla Extract
Method
- Make the popcorn:
- Heat the coconut oil in a large pan over a moderate to high heat. Add 3 of the popping corn kernels and listen - when you hear the first one pop, add the rest of the popping corn to the pan & put lid on top.
- Using oven gloves, shake the saucepan so that the oil covers all the corn, can take a peek to make sure but keep lid on.
- Allow the corn to pop until you have a full saucepan and the popping sound has slowed down, take lid off and turn off heat - add a pinch of salt, mix and set aside.
- Make the salted caramel:
- Place all the caramel ingredients into a high powered blender or food processor and blend until all ingredients are combined and the consistancy is smooth.
- Spoon into a bowl and set aside for a moment.
- Prepare the chocolate:
- Pulse the coconut sugar in the cleaned food processor or blender for a moment to create a finer texture.
- Melt the cacao butter over a bain marie use a wooden spoon to mix, once melted - let it cool a little then slowly stir the coconut sugar into the mixture until well combined.
- Then mix the cacao powder into the mixture the same way until a smooth, chocolate mixture is formed. Use a small hand whisk if needs be - to avoid lumps!
- Give it a taste at this point, so that the chocolate is to your perfect taste. If not - add more of powder or pulsed sugar.
- Make the eggs:
- Fill half of the silicone egg moulds with the chocolate mixture, then place half a Tbsp of the caramel mixture on top with a few pieces of popcorn.
- Then make sure you cover the popcorn completely with more of the chocolate mixture in the same mould, filling all the gaps.
- Repeat with the rest of the egg mould shapes.
- Pop easter eggs into the fridge for at least 20 minutes to set and go solid.
- Hide, hunt, find - eat and enjoy! Happy Easter!
