Ingredients
- 100g Oats
- 100g Cottage Cheese
- 2 Eggs
- 1 Banana
- 1 Tbsp Soya Yoghurt
- 3 Tsp Baking Powder
- Pinch of Salt
- Groundnut Oil
Optional toppings
- Soya Yoghurt
- Fresh Berries
- Chopped Walnuts
Method
- Firstly, blitz all of the pancake ingredients (except the oil) in a blender until it becomes a smooth consistency. Add a splash of water if it is too thick.
- Next, prepare your chosen toppings in small bowls and set aside.
- Then, heat a frying pan over a medium heat, brush with oil, then pour out excess oil.
- Using a clean Tbsp, drop 3 heaped spoons of the batter into the pan and cook for 1-2 minutes until little bubbles start to form on the surface.
- Next, carefully flip the pancake shape with a spatula and cook for a few more minutes. Or until the pancakes are lightly golden and cooked through. Tranfer to plate.
- Layer the pancakes up and drizzle with syrup and yoghurt. Top with berries and chopped walnuts.
- Serve and enjoy!
