A comforting winter dessert, perfect for beating those winter blues! The combination of pear and coconut go together beautifully creating a sweet, slightly tropical taste. With a beautiful moist, light texture this cake is perfect to round off a hearty meal.


Food Processor

Ceramic Baking Dish




  1. Pre-heat the oven to 170C.
  2. Cut your pears into quarthers or eighths depending on their size. Place into a baking dish. (I used a ceramic one)
  3. In your food processor, mix the oil and sugar together. Mix well
  4. Add the eggs and vanilla. The mixture will be very liquid.
  5. Add the coconut flour and baking powder.
  6. Pour the mixture over the pears and place in the oven.
  7. After 10 minutes the oil will have separated from the other ingredients. Mix everything back together again and leave to bake.
  8. Baking time is approximately 30 minutes. This will depend on your oven. It will have risen like a standard cake and be a lovely golden brown when ready. Check that the mixture is set with a skewer or tooth pick.
  9. Serve warm.
