This ice cream recipe is super quick and simple to make, as well as being absolutely scrumptious! Perfect for the sweltering hot summer months - sit down and indulge in this fruity nice cream. The key ingredient is frozen bananas, as they help to make the texture thick and creamy once blended. No refined-sugar in sight, yet this treat is certainly sweet. The addition of acai berry powder adds healthy antioxidants, a gorgeous taste & immune boosting properties!

Ingredients
  • 3 Large Frozen Bananas
  • 1 Heaped Tbsp Coconut Cream
  • Dash of Vanilla Extract
  • 100g Raspberries
  • 2.5 Tbsp Brown Rice Syrup
  • 1 Tsp Acai Powder
  • OPTIONAL TOPPINGS:
  • Sprinkle of Edible Flowers
  • Sprinkle of Pistachio Nuts

Method
  1. Start off by making the berry ripple: blend the raspberries, syrup and acai powder together in a blender until smooth and place this into the fridge to chill.
  2. For the ice cream, blend the frozen bananas, coconut cream and vanilla in a food processor until smooth and creamy.
  3. Spoon both mixtures into a bowl and slowly and carefully stir through the mixtures to make the berry ripple pattern. 
  4. Freeze for a few minutes or serve straight away. Enjoy!
