This delicious and super easy to make vegan sandwich filler is perfect for summer picnics and back to school lunch boxes. Spoon this Coronation chickpea mixture into crusty rolls or into baked sweet potatoes for a quick lunch or a fuss free dinner.
Equipment
- A large bowl
- Large spoon for mixing
- 1 Tea spoon for measuring
Ingredients
- Handful of Raisins or Apricots
- 1-2 tsp of curry powder (mild or medium)
- 1tsp of mango chutney
- Juice of half a lemon
Method
- If using canned chickpeas ensure that you rise off all of the starchy water.
- Add chickpeas and raisins (or apricots) to a large bowl.
- Add the mayo, curry powder, mango chutney and lemon juice and stir to combine.
- Once the mixture is sandwich filler consistency spoon into crusty rolls, between slices of wholemeal bread or into baked potatoes for a delicious and quick light lunch or dinner.
