If you’re craving something “meaty,” these easy vegan meatballs surely deliver. The TVP mince offers a satisfying mouthfeel, making them a moreish snack on their own. They are also a fantastic addition to pasta sauce, and pair perfectly with gravy, mashed potatoes and steamed greens!

- A pot
- Baking tray
- Baking paper
Ingredients
- 350ml water
- 1 small onion, finely diced
- 1 tbsp soy sauce or tamari
- 1 tbsp oregano
- 1 tsp nutmeg powder
- 1 – 2 tbsp chopped fresh herbs (optional)
Method
- Preheat oven to 200C. In a pot, heat 1 tsp olive oil and add diced onions, cook until browned.
- Add TVP, stir and cook together for about a minute. Add remaining ingredients except for oat flour and leftover olive oil. Simmer until water is completely absorbed – about 10 minutes.
- Remove from heat and allow to cool for a few minutes. Add the oat flour and mix well until all the flour is incorporated. Adjust seasoning if necessary. Using wet hands, shape into 1-2 inch balls and place evenly on baking tray. Drizzle remaining olive oil and Bake for 20 - 25 minutes or until golden brown.
