
Indulge in festive doughnuts, fortunately for you this superb recipe is 100% organic and vegan! They're delicious, easy to make and very seasonal. Packed full of familiar, warming winter flavours like cinnamon, ginger and nutmeg. Sit down with a cuppa and enjoy one of these by a log fire.

Ingredients
For the doughnuts
- 150g Plain Flour
- 1 Banana
- 1 Tsp Ground Ginger
- 1/4 Tsp Nutmeg
- 1 Tsp Baking Powder
- 290ml Soya Milk (unsweetened)
- Pinch of Salt
For doughnut glaze
- 60g Vegan Butter
- 2 Tbsp Soya Milk (unsweetened)
- 2 Tsp Vanilla Extract
For the decoration
- Desicated Coconut
- Red Skittle's or any other small red sweet that's vegan friendly!
- Green Icing to make the leaves
Method
- So to start, pre heat your oven to 180C. Place your banana and all of your wet ingredients into a blender and whizz it up until smooth!
- Then add all of your dry ingredients either into the blender or in a separate bowl before mixing in the wet mixture you've now made.
- Carefully pour and separate your combined mixture into your doughnut tray and place in the center of your pre heated oven.
- After 15 minutes, the tops of your doughnuts should be slightly crisp and ready to remove!
- But whilst they're in the oven, you should make the glaze for the top of the doughnuts. To do so, combine all of your ingredients (minus the vanilla extract) into a pan on a low heat and stir until they are all combined. Take off the heat and add in your vanilla extract and allow to cool.
- Once you have removed your doughnuts from the oven and allowed them to cool on a cooling rack you can begin the decorating to process!
- To do so, dip the top of the doughnuts into the glaze and then set back on the cooling rack before sprinkling some of your desiccated coconut on the top half of the doughnut. Then press a red skittle onto the top of each of the doughnuts for the "berries!"
- For the leaves, use green icing to create a bold tasty touch.
- Leave to dry then share and enjoy!
