
These deliciously fluffy, light breakfast pancakes really are the perfect way to set you up for the day! Full of yummy, healthy coconut ingredients they can be lavishly topped with your favourite spread - fresh fruit, organic maple syrup and raw nut butters finish these off exceptionally well, as does chocolate for a sweet treat on special occasions.

- Egg Whisk
- Ladle
- Frying Pan
Ingredients
- 4 Organic Free Range Eggs
- 237 ml Rice Milk
- 2 Tsps Vanilla Essence
Method
- Whisk the eggs until they're nice and fluffy
- Add in the vanilla, milk and agave syrup and mix
- Add the flour and sugar and mix. You'll get a really thick pancake batter ready to ladle out into the frying pan
- Melt the coconut oil in the pan and when ready ladle out the batter
- Spread out with a spoon to make the pancake thinner and to make sure it cooks through
- Flip Pancakes and serve once it's cooked through
