Vegan Quinoa Christmas Burger Recipe
Gluten Free, Vegan, Vegetarian, Sugar Free, Dairy Free
Eat immediately or leave to cool then freeze

An easy to make burger with a twist due to the inclusion of our Kick Ass Vegan Smoothie Mix! The inspiration to create this was fuelled by the lack of vegan festive Christmas fayre in local cafes and restaurants and the result truly is "Christmas in a Burger".

  • Saucepans
  • Bowl
  • Non Stick Baking Sheet

  1. You’ll need to prepare your quinoa, you can use any variety you like, however I’ve selected black and white because it gives a combination of texture – crunchy and soft
  2. Blend your sundried tomatoes and add boiling water to your dried fruit to plump it out a bit.
  3. Grind your sage and thyme
  4. In a bowl simply mix all your ingredients then shape into 6-8 burgers
  5. Bake in an oven heated to 180 degrees centigrade for approx. 30 minutes or until firm – place on a non stick baking sheet. Carefully turn over after 15 minutes
  6. Serve with your favourite toasted bun, how about some sweet potato fries? A little cranberry sauce would be perfect in a toasted wrap or panini.

This festive burger not only tastes divine, it packs a powerful nutritional punch due to the addition of the Kick Ass Vegan Smoothie mix. Add in the quinoa and the cranberries or blackberries and there is a potent mix of essential vitamins, minerals and antioxidants. Quinoa is packed with protein, fibre, essential minerals and B vitamins, our Kick Ass Smoothie mix is brimming with B vitamins and immune boosting vitamins such as A and C as well as being rich in protein. The B vitamins will support your nervous system, keep your mind focussed and help to regulate your mood. Antioxidant minerals such as manganese, selenium, zinc and copper work alongside the antioxidant vitamins to gently help you detox - all in all this burger is fruity, festive, nutritious and delicious!
