These fresh and fruity flapjacks are the perfect accompaniment to your afternoon tea break! There's a twist in the ingredients used to make these a super healthy treat. They are dairy free, processed sugar free and can be gluten free if you use gluten free oats. Free from allsorts but packed with everything you’d wish for from a flapjack.
Equipment
- Large pan
- Baking paper
- Baking tins
- Either 1lb loaf tin -1/2 Batch or full batch in a brownie tin.
Ingredients
- 160g Rice Malt Extract
- 260g Jumbo Rolled Oats
- 1 Cup Raisins
Method
- Tear a piece of baking paper/parchment that is larger than your tin, screw it up into a ball, then flatten it out and push into the tin.
- Melt the coconut oil & rice malt syrup gently in the pan.
- Remove pan from heat & add the oats, dried fruit & seeds. Stir in thoroughly.
- Using the back of a metal spoon or the spatula, level out the mix and then firmly press it into the tin.
- Then place in the middle shelf of the oven and cook for 20 minutes. For a softer bite and up to 25 minutes for a firmer bite.
- Remove from the oven and place on a cooling rack
- Allow to cool for 20 minutes then slice into bite sized pieces or oblong bars. Then return to the tin to cool fully.
- Once cold, remove from tin and store in an airtight container.
