Gluten Free Christmas Gingerbread Men Recipe

Gingerbread.... the smell of childhood! However these tasty treats are not only good for you, they are brimming with health giving nutrients, gluten free and vegan too. A perfect accompaniment to that relaxing cup of afternoon tea.



  1. Sift together the Coconut Flour, bicarbonate of soda, ginger and cinnamon and mix until combined.
  2. Add your vegan spread and mix until you get the consistency of breadcrumbs then add the Coconut Sugar .
  3. Melt your Coconut Oil and add that with the soaked chia seeds. Mix everything together until your mixture clumps together into dough.
  4. Knead until smooth then roll out the dough on a floured surface until it is around 0.5cm thick.
  5. Use your cutters to make whatever shapes you desire and place onto the greased baking trays and then into the oven for around 12-15 minutes until they are golden brown.
  6. When cooled, feel free to decorate! Enjoy with a lovely cup of tea.
