Ingredients
- 1 1/2 Tbsp Tapioca Starch
- 1 Tsp Baking Powder
- 1/4 Tsp Bicarbonate of Soda
- 1 Orange
- 1.5 Cup Unsweetened Soya Milk
- 1 Tsp Vanilla Extract
- Oil Spray
Optional topping
- Melted Chocolate
Method
- Start by heating your Waffle Iron.
- Melt the coconut oil in a saucepan on a low heat.
- Add all the dry ingredients to high powered blender and the zest of an orange, and blitz!
- Cut orange in half and squeeze 1 half into jug with the soya milk and stir throughly leave for a few minutes to curdle.
- Add the coconut oil, vanilla extract and soya milk to blender with the blended dry ingredients and blitz until smooth.
- Add mixture from blender into jug and stir mixtures together.
- Lightly spray your waffle iron with oil spray and add enough of the waffle batter mixture to coat the grill evenly.
- Let mixture cook undisturbed in waffle iron for 3-5 minutes (depending on your waffle iron recommendations) or until crispy to your liking.
- Remove from waffle iron once cooked, squeeze other half of orange over the top and add any optional desired toppings such as melted chocolate!
- Eat and enjoy!
