Free from egg and gluten, this Superfood Waffle Recipe includes our nutritious White Mulberries and Soya Flour for free-from goodness. Top with raspberries and melted chocolate for added flavour.

Ingredients
Waffle mixture
- 1/4 Tsp Salt
- 4 Tsp Baking Powder
- 1 Tbsp Sugar
- 415ml Milk
- 1 Tsp Vanilla Extract
- 120ml Vegetable Oil
- 2 Tsp Egg Replacer
- 60ml Water
- 1 Knob of Butter (for greasing)
Optional toppings
- 1 Cup Fresh Whipped Cream
- 1/2 Cup Fresh Fruits
- 1/2 Cup Nuts
- 1 Cup Melted Chocolate
Method
- Firstly, place the waffles mixture ingredients into a large mixing bowl except for the white mulberries and whizz with an electric hand blender until mixture is thick, sticky and smooth.
- Then, add the white mulberries to the mixture and stir with a wooden spoon.
- Paint your waffle maker with a knob of butter to grease and prevent the waffle from sticking onto the waffle maker.
- Cook in waffle maker until golden brown, keep checking. Will take approx. 10 minutes.
- Wait 2 minutes for the waffles to cool down before serving, otherwise they may break.
- Top waffles with extra mulberries, cream, fresh fruit and nuts - then drizzle melted chocolate over to taste.
- Serve and enjoy!

Notes
- Swap the Sugar for Coconut Sugar if you prefer a healthier option.
- Drizzle of Chocolate can be substituted for Maple Syrup or our Pure Vegan Chocolate.
- Coconut Oil can be used for greasing instead of Butter.
- You can make your own Egg Replacer by soaking 1 Tsp of Chia Seeds with 3 Tsp Water for at least 20 minutes or overnight if possible. This will create a gel like mixture that can be used as an egg substitute.
