Wish you could feel good after demolishing a doughnut? Now you can! These delicious Double Chocolate Baked Doughnuts are gluten-free, dairy-free and 100% vegan. Packed full of gorgeous goodness, get a boost of energy from the nuts and almond butter. Cacao powder provides "feel-good" phyto-nutrients and each bite is naturally sweetened with dates and coconut oil. These super treats really are guilt-free!

  • Doughnut Tin
  • 2 x Mixing Bowls
  • Spoon
  • Spatula
  • Toothpick
  • Food Processor
  • Cooling Rack

Method
  1. Start by preheating the oven to 180 degrees celsius.
  2. Use Coconut Oil to grease your doughnuts tin.
  3. In a bowl, mix all dry ingredients together until fully combined.
  4. Next, in a seperate bowl - whisk together all the wet ingredients. Then pour this into the dry mixture and gently spoon everything together.
  5. Be careful not to overmix as this will result in a heavy consistancy. 
  6. Let your doughnuts batter sit for 5 minutes and do not mix again after this point.
  7. Next, scoop the batter into the doughnuts moulds, try not to overfill them as they will rise during the bake. Also, do not press the batter down, be genltle and if needs be level the mixture with the back of a spoon or spatula.
  8. Bake in the oven for 18-20 minutes.
  9. To check if they're cooked, insert a toothpick in the top centre of the mixture - it should come out clean.
  10. Whilst the doughnuts are baking, it's time to make the chocolate frosting! Simply place the dates, almond butter, raw cacao powder and the peeled and broken up avocado into a food processor and WHIZZ!
  11. You may need to stop to scrape the mixture off the sides of the food processor from time to time and blitz again. You want a really smooth frosting consistancy so don't be afraid to whizz for a little while.
  12. Once the doughnuts are baked, looking and smelling divine, take them out of the oven and let them sit in the moulds for at least 15-20 minutes. 
  13. Next, remove the doughnuts gently from the tin and sit them on a cooling rack for 30 minutes. 
  14. Once the doughnuts are cool, spread the frosting onto the tops of the doughnuts using a spatula and sprinkle on your toppings of choice.
  15. Share and enjoy with family and friends!
