Enjoy this simple and delicious bright green soup full of your favourite greens. The addition of kale powder gives it a unique taste with the knowledge that you're adding high nutritional content, vitamins & iron. The creaminess of this recipe makes it a very satisfying & fulfilling lunch dish.

  1. In a large pot, heat up a tablespoon of coconut oil and sauté 2 cloves of chopped garlic. Add the chopped spring onion, chopped broccoli florets, baby spinach and sauté till the spinach is a little wilted.
  2. Add the stock, salt and pepper and bring everything to a boil. Then reduce it to a simmer and cook for 15-20 minutes till the broccoli is tender.
  3. Transfer the broccoli and spinach mix into a blender or food processor, along with the liquid.
  4. Add the raw cashews, kale powder and the fresh herbs.
  5. Blend or process on high till the soup is smooth and creamy.
  6. Taste and check for seasoning.
  7. Add more stock if the soup is too thick.
  8. Serve hot and enjoy!
