Gorge on this dairy-free Hot Cross Bun Ice Cream as a healthy sweet treat this Easter. A very simple and easy to make nice cream recipe! The orange zest and cranberries offer a fruity flavour to complement the spices; cinnamon, cloves, ginger and nutmeg. The texture of this ice cream is like a frozen smoothie, that is nutritionally dense - thank to the antioxidant-rich cranberries, vitamin-C boosting oranges and blood sugar stabilising spices. Enjoy this Easter Ice Cream as an afternoon treat or pudding after a feast!

  1. Add half of the cranberries to a food processor along with all the rest of the ingredients. 
  2. Whizz food processor, until a smooth consistancy is formed.
  3. Pour the mixture into a small tupperware box, then stir in the remaining cranberries and place into the freezer for at least 2 hours to set. 
  4. Once set, scoop into serving bowls and garnish the top with cranberries and sultanas.
  5. Eat and enjoy!
