Kay's Seedy Nutty High Protein Energy Bars Recipe

This delicious protein bar recipe was originally invented to be a source of energy for a participant in one of the most gruelling bike rides in the UK. They are a dense and have absolutely everything you need to keep every part of the body ticking when you're pushing your limits. The contributing ingredients are lots of seeds, Raw Cacao Powder, big dollops of Pumpkin and Almond Butter, Dates and Vanilla. None of these top grade ingredients are heated in this recipe which means that they keep their original raw power to be an ultimate snack when you need to test your endurance.


  1. Slice up the Dates and Vanilla pod into small pieces
  2. Whizz up the seeds and coconut in a food processor until they are like fine breadcrumbs, but not so long that they go moist
  3. Put the Seed and Coconut mixture in a bowl
  4. Whizz up the dates, almond nut butter, pumpkin seed butter, cacao powder and half a cup of boiling water until really smooth
  5. Add the above to the bowl of seed mixture with the Vanilla and the Rolled Oats
  6. Mix well
  7. Press into an 7 or 8 inch baking tin that is lined with baking parchment
  8. Leave in the fridge for an hour
  9. Cut into squares

The most obvious variation to this recipe is that you can add you favourite seeds or just use one variety. Both the Nut Butters can be swapped around to give you different flavours. We recommend that you keep the Cacao Powder and dates in place because they are so delicious and really make these little bars the very best they can be. If you prefer a different taste to Vanilla then why not try Cinnamon for a lovely sweet spicy twist.


There are a whole host of benefits to this rich nutty energy bar recipe.
