
This delicious soup is packed with goodness and wonderful as a post-workout meal due to its complete amino acid content. Given an powerful nutritional boost by our Vegan Protein Powder, this soup recipe is super healthy and super tasty and is guaranteed to warm your cockles on a cold winters day.

Ingredients
- 1 tin (400g) cannellini beans
- 250g peas
- 250g fresh spinach
- 4 cloves of garlic (or less depending on taste)
- 1 white onion
- Truffle or olive oil to garnish
Method
- Finely chop the onion and garlic and fry them gently in a large saucepan for 10 minutes in olive oil.
- Add 1 litre of boiling water and boil the peas and cannelini beans for 5 – 10 minutes (you can add some stock for a little extra flavour).
- Right at the end, add the spinach and Smoothie Mix and allow the spinach to wilt for 1 minute while stirring it in.
- Add the mixture to a blender, blend until it is as smooth as you want it, transfer back to the saucepan to reheat.
- Then serve! I like to add a dash of truffle oil on top of the soup to add even more flavour, and dip crackers into the soup for some texture.
