This warming Kiwi & Coconut Chia Seed Pudding is a delicious recipe to enjoy for breakfast, dessert or as a snack. Easy to make, rich in fibre and sweet to eat. This vegan chia pudding recipe is gluten-free and dairy-free. Chia seeds are a daily superfood staple packed with goodness while kiwis are a great source of vitamin C. Ingredients
- 1/2 Can Coconut Milk
- 3 Ripe Kiwis
Method
- Firstly, in a bowl soak the chia seeds with the coconut milk and set aside. (If possible its best to leave to soak in fridge overnight).
- Once soaked to a pulp-like mixture, scoop into microwaveable serving dish.
- Place in the microwave for 30 seconds.
- While heating, peel kiwis and chop into bite size pieces.
- Place kiwi pieces on top of chia pudding, squeeze over some coconut blossom syrup - as much as you'd like.
- It is now ready to eat! Serve immediately for best taste.
