
These bars are perfect fuel for pre or post exercise. They are a delicious blend of lemon, walnuts, and pumpkin seeds and contain an added boost from the power of pea protein.

Ingredients
Method
- Line the loaf tin with cling film.
- Put the dates into the food processer, then blend until smooth.
- Add the walnuts and lemon zest then blend into the dates.
- Now add the pumpkin seeds and desiccated coconut; carefully partially pulse these into the mix to retain some texture.
- Then sprinkle over the chia seeds and give a quick pulse just to mix them in.
- Spoon mix into the lined tin and press down firmly to 2cm in thickness, smooth out and place in the fridge for at least 1 hour.
- Remove from fridge, carefully lift out, remove cling film and slice into 6 bars with sharp knife.
- Wrap individual bars in lined foil paper, that way you can take them out with you for nutritious power throughout the day!
