Lassi is a hugely popular Indian drink, it is often referred to as the world's first smoothie and is well known for having ayurvedic healing properties with a calming effect on the stomach and mind. Try this super refreshing delicious recipe, thinned by the cucumber and boosted with cardamom - it makes for a fantastic clean eating smoothie! (Note: this amount makes 1 large glass or 2 small glasses)

Ingredients
- 250ml Plant Milk
- 4 Tbsp Soya Yoghurt
- 1 Inch Chunk of Cucumber
- Pinch of Salt
- 1 Pitted Date
- Handful of Ice Cubes
Optional
- Orange Slice to Garnish
Method
- Firstly take a few cardamom pods and grind them in a pestle and mortar to release the seeds, discard the husks and grind the seeds a little.
- Next, place all ingredients (except the ice cubes) into a high powered blender and whizz to a smooth consistency.
- Just before serving, blend the ice cubes into the mix.
- Pour into serving glass, slice an orange and garnish the glass.
- Drink immediately and enjoy!
