
These chocolate-covered vegan Match Energy Balls with a hint of lemon are so quick and easy to make. A no-bake, protein packed healthy snack that's tasty too.
Equipment
- Food processor
- Heat proof bowl
Ingredients
- 2 tbsp lemon zest
- 1 tsp vanilla extract
- 135g dark vegan chocolate
Method
- Add the oats, walnuts and pumpkin seed to a food processor and blend until you have a rough powder
- Add 2 tbsp matcha tea powder and lemon zest and blitz until everything is combined
- Next, add the dates, maple syrup and vanilla extract and blend until you have a rough dough
- Take a tabelspoon of mixture and roll into a ball using your hands. Repeat until you have used all the dough and place on a plate, leave in to chill in the fridge while you melt the chocolate
- Heat water in a pan and place a heatproof bowl over the pan. Break up the chocolate into the bowl and stir until melted
- Once the chocolate is melted, dip each ball of mixture into the chocolate and transfer to a baking tray line with parchement paper. If you are using desiccated coconut, sprinkle it onto each ball and place in them in the friedge to set.
- Once the chocolate has set, dust a little matcha over the energy balls using a small sieve.
- They are now ready to eat, however, we love these chillde, straight from the fridge. So, if you like, pop them back in the fridge to chill for half an hour or so
