This unsweetened Granola is naturally delicious, grain-free, gluten-free and great as part of the paleo diet. Packed full of nutritious nuts & seeds, it is low carb and high in protein. Sprinkle this on top of your breakfast bowls, enjoy after a workout or as an after dinner treat.

- 125g Blackberries
- 400g Coconut Yoghurt
Method
- Firstly, preheat the oven to 180C.
- Place the whole almonds and walnuts on a bakign tray. Toast in the oven for 6 minutes.
- After the nuts have been in the oven for just over 6 minutes, mix the seed mix with the melted coconut oil and add to the baking tray of nuts.
- Toast both in the oven for a futher 9 minutes and then add teh coconut chips and roast it all for a further 5-6 minutes, keep an eye on it!
- Overall, the almonds and walnuts would have been in the oven for 20 minutes.
- Make sure to keep a close eye on the coconut chips, as they can burn easily. Remove the granola from the oven when it looks a nice golden brown colour.
- Allow to cool then chop the nuts into smaller chunks.
- Meanwhile, whizz the blackberries up in a blender to make a coulis.
- Add 100g of coconut yoghurt per person to a serving bowl, top with the blackberry coulis, paleo granola and a sprinkle of goji berries.
- Eat and enjoy!
