This tropical tasting cake is a lovely fruity treat as a dessert or indulgent treat. Baobab Powder is an amazing addition, the fruit supports the immune system, bone & muscle health & muscle function. Now we are coming into the colder months it's important to keep up the vitamin C levels, which this cake has bouts of!

- Large Mixing Bowl
- Square Tin
- Hand Whisk
Ingredients
- 1 tsp Bicarbonate of Soda
- Pinch of Salt
- 3 Eggs
- 100g Pineapple Chopped Small (tinned)
Method
- Preheat the oven to 180 degrees and line a square cake tin.
- Whisk together the coconut oil and sugar in a large bowl until light and fluffy.
- Break in your eggs one at a time and add a little flour with each egg until all the flour is in the mixture.
- Add the salt, bicarb, baobab and pineapple and fold in.
- Put the mixture into the tin and bake for 20-30 minutes until golden on top and springy to touch.
- It may take a little longer depending on how much moisture the pineapple gives out.
- Leave to cool and serve with some cooked down pineapple and cream!
