This tropical tasting cake is a lovely fruity treat as a dessert or indulgent treat. Baobab Powder is an amazing addition, the fruit supports the immune system, bone & muscle health & muscle function. Now we are coming into the colder months it's important to keep up the vitamin C levels, which this cake has bouts of!

  • Large Mixing Bowl 
  • Square Tin 
  • Hand Whisk 

Method
  1. Preheat the oven to 180 degrees and line a square cake tin.
  2. Whisk together the coconut oil and sugar in a large bowl until light and fluffy.
  3. Break in your eggs one at a time and add a little flour with each egg until all the flour is in the mixture.
  4. Add the salt, bicarb, baobab and pineapple and fold in.
  5. Put the mixture into the tin and bake for 20-30 minutes until golden on top and springy to touch.
  6. It may take a little longer depending on how much moisture the pineapple gives out.
  7. Leave to cool and serve with some cooked down pineapple and cream!
