Enjoy this easy to make, guilt-free Polenta Loaf Cake - a gorgeous celebratory cake. This vegan & gluten free cake is made of polenta that creates a light sponge with the almond flour, giving this bake a flourish of flavours, while being zingy, refreshing and moist too. A delicious treat for any event - topped with crunchy pistachios, tasty syrup and fun orange stars!

Ingredients
For the cake
- 150g Polenta
- 120ml Dairy-Free Yoghurt
- 1/4 Cup Unsweetened Orange Juice
- 1/4 Cup Almond Milk (room temp)
- 2 Tbsp Orange Zest
- 1/2 Tsp Baking Powder
For the syrup
- 2 Tbsp Unsweetened Orange Juice
For the decoration
- 25g Pistachio Nuts
- Selection of Orange Peel Stars
Method
- Firstly, pre-heat the oven to 175 degrees c.
- Place all of the wet cake ingredients; yoghurt, coconut oil, almond milk, agave and oj into a jug and whisk well and set aside.
- Next, place all of the dry cake ingredients; almond flour, polenta, baking powder, cardamom seeds and orange zest into a large bowl and whisk together until well combined.
- Then, pour the wet cake mixture into the dry one and whisk all together.
- Pour into loaf tin lined with parchment paper, so it doesn't stick to the sides.
- Bake in pre-heated oven for 35-40 minutes until a skewer comes out clean when the cake is poked.
- After baking, allow the cake to cool for a few minutes before using a cocktail stick to poke shallow holes.
- Combine and heat the orange juice and agave syrup together in a small saucepan to create the syrup.
- Peel and cut out little stars from orange peel.
- Pour the syrup evenly over the cake, so that that the mixture soaks into the cake through the poked holes and gives the orange stars a glazed look.
- Crush the pistachio nuts using a grinder or carefully with a knife and sprinkle on top of the cake.
- Let entire cake set on the side for 30 minutes, so the syrup can completely soak into the cake and create a delicious moist taste.
