After a goulish dish to scare your dinner guests? Fortunately, these creepy gorey gooey jam brains are really rich, sweet and yummy too! They may look terrifying and pretty ghastly, but these luxurious raw cakes are a delicious caramel-esque energy boosting nutty surprise, naturally sweetened with vanilla powder and yacon syrup. Goji berry jam adds a sharper taste that is a great tasty way to show the raw brain cakes swimming in blood! Mwahahaha, happy Halloween!
Equipment
- Silicone Brain Moulds
- Sieve
- High Powered Blender
- Freezer

Ingredients
- 200g Soaked Cashews
- 2 Tsp Soy Cream
- Juice of 1 Lemon
Method
- Night before make: put cashews and goji berries into cups filled with water, leave to soak overnight.
- In a pan melt the coconut oil, add this to blender with the sieve drained cashew nuts and yacon syrup.
- Blitz until a smooth paste is formed.
- Add the vanilla powder and soy cream to blender, whizz again.
- Wash the silicone mould if it's new to remove any residue.
- Press mixture into moulds banging down a few times and/or pressing firmly to remove any air bubbles. Smooth off across top with a butter knife.
- Place in freezer and allow to set for a minimum of 2 hrs before removing from mould and placing back in freezer with care.
- This process is speeded up by having multiple moulds or making 1 large raw mould cake.
- The shapes need to be kept frozen during the process and removed from freezer 10 mins before serving.
- To make the jam: Add sieved soaked gojis and water to a pan and add the juice of 1 lemon, simmer and stir for up to 1 hr until consistency is thick and jam-like.
- Semi blend with hand blender if gojis are still whole and you want a smoother jam.
- Place each brain in small serving dish and spoon on the goji jam! Eurgh! Brains!
- Serve and scare!
