
Raw carrot and coconut squares are a no-bake, easy to make, tasty snack. Carrot and coconut team well together and form a fresh, smooth flavour. Gooey and moreish, they're perfect for on the go or as a mid afternoon snack to give you a superfood boost.

- 20cm by 10cm Loaf Tin
- Baking Paper
- Food Processor or Blender
- Freezer
- Sharp Knife
Ingredients
- 2 Large Carrots (grated)
- Dash of Boiling Water
- 1 Tsp Mixed Spices
Method
- Firstly, grease a 20cm by 10cm loaf tin and line with baking paper.
- Place the dates in a strong blender or food processor with a dash of boiling water and mix until it forms a date paste.
- Add in the grated carrots, coconut oil, coconut chips, coconut flour, chopped pecans, cinnamon and mixed spice and whizz until it forms a smooth mixture.
- Place the mix in the lined tin and place in freezer for up to 2 hours.
- Take out frozen mixture and chop with sharp knife into squares.
- Eat and enjoy!
