Raw carrot and coconut squares are a no-bake, easy to make, tasty snack. Carrot and coconut team well together and form a fresh, smooth flavour. Gooey and moreish, they're perfect for on the go or as a mid afternoon snack to give you a superfood boost. 


Equipment
  • 20cm by 10cm Loaf Tin
  • Baking Paper
  • Food Processor or Blender
  • Freezer
  • Sharp Knife
Method

Print

  1. Firstly, grease a 20cm by 10cm loaf tin and line with baking paper.
  2. Place the dates in a strong blender or food processor with a dash of boiling water and mix until it forms a date paste.
  3. Add in the grated carrots, coconut oil, coconut chips, coconut flour, chopped pecans, cinnamon and mixed spice and whizz until it forms a smooth mixture.
  4. Place the mix in the lined tin and place in freezer for up to 2 hours.
  5. Take out frozen mixture and chop with sharp knife into squares.
  6. Eat and enjoy!
