- Chopping Board
Ingredients
- 8 Button Mushrooms - chopped
- 10 Chopped Olives
- Chunk of Chopped Cucumber
- Chopped Raw Beetroot
- Chopped Raw Celery
- Chopped Raw Kale
- 3 Tbsp Rice of your choice (cold)
- Handful Cashew Nuts
- 1 Tbsp Sunflower Seeds
- Olive Oil & Mixed Herbs for Dressing
- Pinch of Himalayan Salt
- Pepper to Taste
Method
- Cook the rice and allow to cool
- Meanwhile chop all your veggies into rough chunks
- Mix the olive oil, herbs and add some vinegar if you prefer for the dressing
- Top with the Cashew Nuts, Chia Seeds and Sunflower Seeds
