Roast Gobi Cauliflower Hummus Recipe

Cauliflower has a simple classic taste but when roasted to sweeten and blended with garlic and spices, it'll be transformed into a distinctive spiced dip. With a creamy texture created by the white sesame tahini this is a superb snack to enjoy with friends.

  1. First, preheat your oven to 200 degrees c.
  2. Heat the coconut oil in an oven proof dish. Keep watch on it, this wil only take a few moments.
  3. Chop cauliflower into florets. 
  4. Once the coconut oil is melted, toss in the florets, turmeric, mustard seeds and salt into the dish - ensuring they're all mixed together.
  5. Roast for approx 25 minutes until the florets are browned and seem about to burn (but not burnt!) this means they are going to be really sweet.
  6. Spoon your roasted cauliflorets mixture into a blender with the garlic, tahini and pepper. Whizz and blend! The oil from the roasting should ensure it blends well.
  7. Once fulled combined, spoon into serving bowl and enjoy with savoury pancakes or crunchy veg crisps.
