This easy to make Middle-Eastern blend of herbs combines tangy sumac with earthy thyme and toasted sesame seeds. The salt brings out all the flavours, and the optional add-ins allow you to personalise this mix to your own taste. Try blending this spice mix with olive oil and tahini and drizzling it over salads, roast veggies or grilled tofu.

Ingredients
- 4 Heaped Tbsp Ground Sumac
Optional
- 1 Tbsp Dried Oregano/Cumin/Marjoram
Method
- Firstly, in a dry frying pan toast the sesame seeds on a high heat for 2 minutes, until fragrant.
- Meanwhile, combine all other ingredients in a small bowl and stir together.
- Once toasted, mix the sesame seeds into the small bowl.
- Place seasoning into storing jar - it's ready to use!
