Superfood Coconut Ice Bites are a delicious refreshing treat to keep in the freezer for when you need a little superfood boost! Sweetened with vanilla & maple syrup these are great for after a workout, or pop them in your drink, for a funky extra ice taste!

- Non-stick Pan
- Wooden Spoon
- Rubber Ice Mould
- Freezer
Ingredients
- 100ml Coconut Cream
- 1/2 Tsp Vanilla Essence
- 1 1/2 Tbsp Coconut Butter
Method
- First, place a non-stick pan onto a high heat.
- Next, add the coconut cream, maple syrup, desiccated coconut and vanilla essence to the pan and boil for 2 minutes until the mixture starts to thicken. Lightly stir with wooden spoon.
- Then, remove mixture from the heat and add the coconut oil and coconut butter - stir.
- Pour the mixture into a rubber ice mould tray - this amount of mixture fills a 16 mould tray.
- Place in freezer for at least 30 minutes to set.
- Serve straight from the freezer and enjoy!
