Ingredients
- 250g Purple Sprouting or Tenderstem Broccoli
- 500g Green Beans
- 150g Chopped Kale
- Handful of Fresh Parsley
Method
- First, top and tail the beans, and chop them in half. Bring a large pan of water to the boil, and rest a colander over it, to steam the vegetables.
- Add the broccoli and steam, covered for 2 minutes, then add the beans, cover, and steam for a further 2 minutes.
- Next, add the kale, cover, and steam for 4 more minutes, then dowse the vegetables in cold water, to halt the cooking process.
- Arrange the greens on your serving dish or bowl.
- Sprinkle over the organic supergreens powder, to make it a supergreens salad.
- To make the dressing, finely chop the parsley and put it into a small jar. Add the olive oil and vinegar, and liberally grind in salt and pepper. Shake the jar for 30 seconds or so.
- Then drizzle the dressing over the salad, and top with pomegranate seeds.
- Serve and enjoy!
