This vegan Apple Pie is made with Amaranth Flour and Coconut Flour for pastry and uses agave and fruit to sweeten so no added sugar necessary!
Ingredients
For the pastry
- ½ tsp vanilla extract
- 3 tbsp organic olive oil
- 50-70ml water
For the filling
- 5 organic apples
- 30g raisins
Method
- Chop up the apples and put them in a pan over a medium heat with a tbsp of water for about 30-45 minutes. Add more water if necessary.
- In a separate pan, dissolve the agave syrup in 50-70ml water and add the vannila extract
- In a bowl mix the amaranth flour and coconut flour. Add the olive oil and mix with your hand until it forms a crumbly texture. Add more flour or water if necessary. Put in the dough in the fridge for 20-30 minutes.
- Prepare the crust by making two sheets out of your dough. Lightly grease a cooking pan with some olive oil and place one of the sheets into the bottom of your dish.
- Once the apples have cooled, mix in the cinnamon, agave syrup, walnuts and raisins.
- Pour the filling into your dish and lay the second sheet of dough over the top.
- Cook in a preheated oven at 180°C for 35-40 minutes of until golden brown.
