
These healthy vibrantly green & nutritionally dense minty free-from bars are a great post workout snack or to curb your mid-week cravings - & they're easy to make! Adding mint oil helps to balance the strong after-taste of the pea protein powder. There is also a mild grassy flavour from the wheatgrass powder, naturally sweetened by the caramel-esque taste of yacon. A super snack for all dietary requirements & all times of day!

- Baking Paper

- Bain Marie Saucepan & Glass Bowl
Ingredients
- 6 Tbsp Filtered Water
- 25g Vegan Chocolate
Method
- Firstly, in a food processor add the brazil nuts and coconut chip and process till they resemble fine crumbs. Add the rest of the ingredients at this point except the water, peppermint oil and the chocolate.
- Once it is well combined, add half the water and half the amount of peppermint oil and blitz till combined. If you prefer to have a stronger peppermint flavour add the rest of the peppermint oil.
- Slowly keep adding the water a little at a time. You will know if it's ready when it starts forming into a ball.
- Line a rectangle tray or box with baking paper and press down the green protein mixture into an even layer. It should be 1 inch in thickness.
- Place in your freezer for 1 hour to harden a bit. Then cut into rectangle bars with a sharp knife.
- Melt the vegan chocolate in a bain marie over a saucepan and drizzle over the frozen bars or dip the bars into the chocolate. Make a mess and have some fun!
- Store in the freezer or fridge.
