
These muffins are rich and packed with proteins, they are low in sugar as the maca and cinamon adds a caramel taste. The walnut flour together with bananas cook to a deep brown colour almost chocolatey. Great for breakfast or heathy wholesome snack.

Ingredients
- 2 Ripe Bananas
- 3 Eggs
- 1 1/2 Tbsp Plant Milk
- 1 Tsp GF Baking Powder
- 1 Tsp GF Baking Soda
- Pinch of Salt
Method
- First preheat the oven to 180 degrees.
- In a large mixing bowl first put the gram and walnut flours, sifting if possible to remove any lumps.
- Add the rest of the dry ingredients: baking powder, baking soda, cinnamon, vanilla, maca powder, salt.
- If not done so already, melt the coconut oil in a saucepan on a low heat.
- Then making sure it is not piping hot, add this to a seperate bowl than before with the mashed bananas, coconut sugar, eggs and plant milk. Mix well.
- Add these two mixtures together and finally stir in the chopped walnuts.
- Carefully spoon into muffin tins, keeping the mixture just below the top edge of the tin to allow for rising.
- Bake on 200 for 20-25 mins or until browing ontop.
- Leave to cool on side before taking out of tin.
