Beetroot used to be long just like a carrot and wasn’t bred into the oval shape until the 16th century. In fact, during the middle ages Beetroot was thought to be more of a medicine than a vegetable. The ancient Greeks regarded Beet root to be just as valuable as silver and offered Beetroot to the god Apollo in his temple at Delphi. It was the Romans though who started to cultivate Beetroot in vast quantities and included it in cooking and salads. The popularity of Beetroot grew extensively around Victorian times; this was because of its vibrant and attractive colour, making it a chef’s choice for brightening up salads and soups. Later, during World War II, Beetroot was pickled so that it could preserved and rationed for times when food was scarce.
Beetroot comes in a few different colours but the most popular is the purple variant. Interestingly, in the medieval period, people preferred to eat the leaves rather than the tap root of the plant. A member of a wide family in the ‘Beta Vulgaris’ genus, this vegetable is common in Europe, Northern America and central America. A very nutritious vegetable that is used in a variety of ways in cooking today.
