Like the Red Kidney Bean, the Cannellini has a slight curve to it's shape, but can also look squarish. Also called the Navy Bean, the Cannellini is normally a white or pale in colour. This bean became famous during WWII when the US military made the Cannellini the main staple for it's troops. Like other beans in the same family, Cannellini Beans are high in protein and have been shown to lower certain types of cholesterol.

How to Cook:

  • Place dry beans in a bowl covered with several inches of water, and cover with a kitchen towel. Let them sit for 8 hours.
  • Place the soaked Cannellini beans in a pan and cover with a fresh change of cold water, then bring to the boil. The beans must boil for ten minutes to destroy the toxins. After this, simmer until cooked (approximately 45 to 60 minutes), when they should have an even, creamy texture throughout.
