Einkorn Wheat Products
Einkorn is an ancient grain containing less gluten and more nutrition than modern wheat. It was cultivated as far back as the Bronze Age and is much easier on the digestive system than its modern day counterparts. Most modern wheat is a hybrid of many different grains and grasses that have been hybridized to increase yields and fight off disease. Einkorn differs in that it is, like most other plants, a "diploid" - containing only 2 sets of chromosones giving it an entirely different gluten composition. Einkorn has a rich, earthy flavour and makes excellent rustic breads, pizza bases, pasta and sweet baked goods.
