Cracked Freekeh can be used as a substitute for quinoa, rice or couscous. It is delicious when added to stews, salads and can be used to thicken up soup.
To Cook:
Use 500ml of water per 100g of Freekeh (serves 2 persons)
Add salt and 1 tbsp of olive oil (optional)
Bring to the boil the reduce heat and simmer for 15 minutes

Tender young wheat grains are harvested at their nutritional peak then sun-dried before being traditionally roasted. The roasted grains are then threshed and further sun-dried to achieve flavour, texture and colour. Finally the grains are “cracked” then tested for pollutants before being made ready for shipping.
